Our signature secret cheese blend contains no mozzarella and as a result emits far less oil during the baking process than cheeses that are mozzarella-based. Smooth and balanced, it's shipped in two pouches of 16 ounces each. One pouch contains enough cheese to cover about two large-sized Old Forge Pizza Express doughs, so two pouches gives you enough for four large doughs. You can also freeze our cheese for months and it still tastes fresh.
